Cauliflower Tots

Ingredients
1 head, large (6-7" did) Cauliflower, steamed1/2C Fresh Parmesan 1 1/2 C Italian flavored Panko Bread Crumbs, 1/2 C Cajon flavored Panko Bread Crumbs1 large Egg1/2 tsp Coriander Salt and Pepper to taste*
Directions
Cut up and team cauliflower until soft, but not limp. Drain water, add coriander, and let cool for a bit.

Once it's cooled, place in blender and puree. Mix in bread crumbs, egg, and parm. Form into tots on sprayed cookie sheet, and cook on 425 for 10-15 minutes.
