Shrimp and Pea Pods

12 oz Shrimp, raw 2 tbsp Sesame Oil 2 tbsp Coconut Oil 1 cup, sliced Onions, raw Snow Peas, 6 oz. pkg. 2 tbsp Soy Sauce 1 tbsp minced (preserved) ginger, Ginger People Not included in nutrition info:rice or cauliflower riceroasted cashews (optional)
Thaw shrimp, if frozen. I also like to slice in half the long way - like butterflying, except you cut all the way through. Set aside.
Heat oils in a large skillet or wok. Add onions, and cook a few minutes. Then add the snow peas (I usually trim the ends off). Cook until almost done. Add the shrimp, soy sauce, and ginger.
When shrimp is done and veggies are cooked to your liking, serve over rice or cauliflower rice. Top with roasted cashews if desired.
