Whole Wheat Basic Pancake Mix

2 cups less 2 tablespoons whole wheat pastry flour2 tablespoons sugar1/2 teaspoons salt1 1/2 teaspoons baking powder
Two cups of this mix yields 12 pancakes.
Whisk the ingredients together. You can place the mix in an airtight container and it will last for up to three months in the pantry!
When you're ready to use, use 2 whole large eggs and 1-1 1/2 cups of milk to mix with the dry ingredients (all 2 cups of it). Feel free to add more milk if you think the batter looks too thick.
