Spiced Rhubarb Compote

Ingredients
2 cup, diced Rhubarb 2 cup, Unthawed Strawberries, frozen, unsweetened 2 tbsp Honey 2 tsp Grated Lemon Rind .5 tsp Nutmeg, ground .5 tsp Cinnamon, ground 1 tsp Vanilla Seeds or Pure Vanilla Extract
Directions
Put all ingredients in a saucepan and simmer for 15-20 minutes, stir occasionally.

Serving Size: Makes approximately 1.5 cups depending on size of strawberries.
