2 3/4 cup Flour - Gold medal all purpose flour 1 cup Granulated Sugar 1/2 cup, unpacked Brown Sugar 3/4 cup Libby's 100% Pure Pumpkin Puree2 tsp Cream Of Tartar 1 tsp Baking Soda 1 tsp Vanilla Extract 1/4 tsp Table Salt1 cup Margarine - Smart Balance w/ Flax, softened1 large Egg2 tsp Pumpkin Pie spice
Preheat oven to 375 F. Line cup0cake pan with liners.
Combine all ingredients in a large mixing bowl and beat at low speed, pausing to scrape down the sides of the bowl. Continue beating until well combined.
Fill each liner 2/3 of the way full. Bake about 20-25 minutes or until toothpick inserted into the center of a muffin comes out dry and clean.
Allow them to sit for two minutes then move them to a cooling rack.
