Chunky Beef Stew

1 onion, chopped1.5 pounds top round steak2.5 cups beef broth2 sweet potatoes, cubed1 lb baby carrots2 celery stalks, sliced1/4 cup tomato paste1/2 tsp ground pepper2 Tbsp Worcestershire sauce1 bay leaf1/4 cup red wine (optional)
Makes 4-5 servings.
Lightly coat a large pot with cooking spray and place over medium-high heat. Add onions and saute until tender, about 5 minutes.
Add beef chunks and saute until browned on all sides, about six minutes.
Add beef broth, potatoes, carrots, celery, tomato paste, black pepper, Worcestershire sauce, bay leaf and red wine. Bring to a boil over high heat.
Reduce heat to low. Cover and simmer, stirring occasionally, until meat is tender, about 1.5 hours. Remove bay leaf with spoon and discard.
