3.0 large Egg white, fresh1.0 cup Spinach, fresh25.0 gram(s) bell pepper, red, sweet, raw0.2 cup, chopped Onions, raw2.0 clove Garlic0.5 cup pieces Shiitake Mushrooms1.0 tbsp Parmesan Cheese, grated0.25 cup Milk, 1%1.0 tbsp Extra Virgin Olive Oil
Pour olive oil in non-stick 10" pan and heat to medium for about 2 minutes. Add onion and bell pepper and saute for about 2 minutes. Add mushrooms and don't disturb for two minutes. Stir ingredients and add spinach and garlic. Stir until spinach wilts. Whisk egg whites with milk and pour in pan, lifting pan and tilting to ensure all surfaces are covered. Either cover and turn down heat slightly until cooked through or carefully flip after 2-3 minutes to finish cooking. Grate parmesan over and fold in half. Slide onto plate.
