Banana Protein Pancakes

2 scoops protein powder 1 large Banana2 large Eggs1/4 tsp baking powder 1/4 tsp saltSplash of vanilla 2 tbsp Coconut Oil
1. Separate egg whites from egg yolks into two separate bowls.
2. Beat egg whites to stiff peaks.
3. Mix rest of ingredients into the egg yolks. Beat until smooth.
4. Very slowly, mix a little bit of the egg whites at a time into the egg yolk mixture until all combined.
5. Heat coconut oil in a skillet over medium. Scoop 1/4 cup of the batter into the skillet. Cook about 1-2 minutes, flip, cook another 1 to 2 minutes.
