Lemon-Kissed Cashew Flax Bars

1 cup cashews1/3 cup Flax Seeds 2 tbsp Lemon juice 1 Tbsp lemon zest1 cup Dates (Sun Date California Pitted)
Place the cashews in a food processor and process till ground up. Add the dates and flax seeds and pulse repeatedly. Then add the lemon juice and lemon zest. Process until the whole thing has formed a big, uniform, sticky ball. Put saran wrap over the bottom of a small baking dish and press the mixture down into it until it is even in thickness. Cover with another sheet of saran and freeze for at least 30 min. Cut into 12 bars. Wrap individually and store in fridge or freezer until ready to eat.
