Rich Bruschetta Endive Cups

6 roma tomatoes, chopped� cup julienned sun-dried tomatoes, packed in oil5 cloves minced roasted garlic2 tbsp tomato oil2 tbsp balsamic vinegar� cup fresh basil, stems removed� tsp Kosher salt� tsp ground black pepperZest of 1 lemon40 leaves Belgian endive1 � cups (8-10 oz) crumbled sheep�s milk feta
In a large bowl, combine the roma tomatoes through lemon zest. Allow the mixture to sit for at least 30 minutes at room temperature.
Just before serving, spoon tomato mixture into endive cups and top each with � tbsp feta.
