Chicken Salad Club Sandwich

Ingredients
1/2 lb boneless skinless chicken breast1/4 cup celery, finely minced10 large red grapes, chopped2 Tbsp onion, finely chopped1/4 cup fat free Miracle Whip1/4 cup T. Marzetti's lite cole slaw dressing1 Tbsp dried sweet basil4 slices turkey bacon, cooked crisp8 slices white wheat bread
Directions
Place chicken in medium pot and cover chicken breasts with water or chicken broth. Cook for 20 minutes, or until chicken is completely done. Cool (even overnight).

Mince cooled chicken until finely shredded and chopped. Add celery, onion and grapes, making sure all items are chopped as finely as possible.
Stir together.

Next mix the Miracle Whip, slaw dressing and basil in a small bowl. Add to chicken mixture and combine.

Place 1/2 cup of the chicken salad on 1 slice of toasted bread. Top with one slice of turkey bacon and another slice of bread. (Andlettuce and tomato if you wish).

Makes 4 sandwiches
