Meat and Veggie Spaghetti Sauce

Ingredients
32 oz Ground Beef (extra lean) 4 tbsp Extra Virgin Olive Oil 1 large Onions, raw 2 serving 1 Med. Green Bell Pepper 2.5 cup, sliced Zucchini 340 grams Mushrooms, fresh 2 large (7-1/4" to 8-1/2" long) Carrots, raw 10 leaves Basil 1 package (10 oz) yields Spinach, frozen 3 tsp Thyme, ground 3 tsp Oregano, ground 4 clove Garlic 3 tsp Granulated Sugar 10 cup Del Monte Diced Tomatoes, No Salt Added
Directions
1. Cook and drain ground beef, reserve 2 Tbsp of drippings.

2. In large stock pot heat oil over medium heat. Cook onions until translucent. Stir in zucchini, bell peppers, mushrooms, carrots, and drippings, cook until tender.

3. Add cooked ground beef. Stir in basil, spinach, thyme, oregano, garlic, sugar and pepper. Cook for 2 to 5 minutes. Pour in tomatoes, stir well, reduce heat, cover and simmer for 3 hours stirring occasionally.
