Dal (Red lentil curry)

Ingredients
1 cup red lentils (from health food store)1/2 tsp. olive oil1/2 cup onion, chopped3 cloves garlic, minced2 tsp. grated fresh ginger root1 tsp. turmeric1/2 tsp. salt, to taste1 jalapeno pepper, seeded and chopped1 cup tomato, chopped
Directions
Sort and rinse lentils. In medium saucepan, heat olive oil and lightly saute chopped onions. Add garlic, ginger, turmeric. Add 2 cups water and lentils, bring to boil and simmer about 20 minutes until lentils are soft. May puree in food processor at this point if you prefer smooth texture.
Add salt and additonal water as needed to maintain soupy texture, add jalapeno pepper and simmer an additional 15-20 minutes.
Serve over brown rice and/or steamed cauliflower. Top with chopped tomatoes.
