Mom's Crock Pot Stuffed Peppers in Tomato Juice

Ingredients
0.25 cup Tomato juice, with salt added16.0 oz Ground beef, lean1.0 serving Minute Rice Instant Enriched Long Grain White Rice 5 min (serv= 1c cooked rice)160.0 gram(s) bell pepper, red, sweet, raw
Directions
Combine raw beef and minute rice. Add Italian seasoning and garlic, salt and pepper to taste. Add chopped onion if desired. Stuff cleaned out red bell peppers with mixture. In crock pot combine 4 Cups tomato juice and 1/2 cup white vinegar. Place stuffed peppers in crock pot and cook on low for 6-8 hour or high for 3-4 hours. Serve with only small amount of tomato juice Serving Size: 1 stuffed pepper
