Soyrizo 'n Veggie Rice

Ingredients

1/2 cup brown rice, dry1 cup water**********4 large mushrooms, sliced1 med. tomato, chopped1/4 bell pepper, chopped1 small onion, chopped2 tsp garlic, minced4 oz soyrizo *equals 1/3 of package
combine brown rice and water and prepare as you would normally prepare rice.

saute garlic, onion, mushrooms & bell pepper in olive oil until onions are transparent.
meanwhile, heat soyrizo on medium/high heat as package instructs. once cooked, add to sauted vegetables.
add tomatoes and saute for an additional few minutes and then add rice. stir until all is well blended and heated through.
makes 2 servings.

-add jalepeno for extra spicy
-add choptle, if you are into that
-jazz it up with some cheese if not vegan
-top with nutrtional yeast for a boost
-makes a great filling for wraps, lettuce or tortilla
