Gingered Parsnips

Ingredients
4 cups parsnips (sliced)1.5 inches of ginger (minced/grated)1 Tbsp canola oil.25 tsp ground nutmeg.5 tsp salt.5 tsp black pepper
Directions
preheat oven to 350. chop parsnips. grate ginger. combine all ingredients in a non-stick cake pan or baking dish. Add an ounce of water. cover with foil. Bake until parsnips are soft, approximately 40 minutes. Makes 8 1/2-cup portions.

    This is YUMMY! I did have to use about 3/4 cup carrots because I didn't have enough parsnips, but I'm sure only parsnips is yummy too. - 6/19/08
