2.0 medium Mushrooms, fresh0.75 medium (2-1/2" dia) Onions, raw1.8 small (1-3/4" to 2-1/2" dia.) Baked Potato, with skin6.5 cup Vegetable Broth4.5 oz Baby Carrots Grimmway Farms (3 oz = about 10/11 baby carrots)4.0 cup kale - Glory chopped kale, fresh0.5 serving 1 Med. Green Bell Pepper
Chop all of the vegetables and set aside. I use scissors to cut the stalks off of the kale. Turn on the stove on medium and place a large soup pot on it. Cook the peppers, onion, and carrots until mostly tender. Add in the potatoes, mushrooms, and the broth. Cook for 20 minutes. Add in the kale, then cook on low heat for a few hours. Add 3 cups of water during the cooking time. Add spices and salt. Towards the end, I blended some of the soup and returned it to the pot to thicken the soup.
