Lentil Soup - Italian

Ingredients
1 tbsp Olive Oil 2 cup, chopped Carrots, raw 1.50 cup, diced Celery, raw 2 clove Garlic 1.50 cup, chopped Onions, raw 2 cup diced Potato, raw 1 cup Lentils 8 cup Homemade Vegetable Stock
Directions
1. Heat oil in a large pot. Add the onions, celery and carrots and sauté for approximately 7 minutes until tender and the onions are golden in color.
2. Add the garlic and sauté for another minute.
3. Add the broth, potatoes and lentils
4. Add the parsley, basil, oregano, and freshly ground black pepper.
5. Cover the pot and simmer for approximately 40 minutes or until the len-tils are tender. Add some water as needed if too thick.
6. Ladle the soup into bowls and garnish with cheese if desired.
