Smashed Potato Chicken Potpie

Ingredients
3 Tbsp butter1/3 C all purpose flour1/2 tsp pepper1/4 tsp salt1 14 oz can reduced sodium chicken broth3/4 C milk2 C frozen peas and carrots2 1/2 C chopped cooked chicken (can sub turkey)2 2/3 C mashed potatoes
Directions
In a large saucepan, melt butter over medium heat. Stir in flour, 1/4 pepper and salt. Add chicken broth and milk all at once. Cook and stir over medium heat until thickened and bubbly. Stir in thawed vegetables and cooked chcken. Pour in ungreased 3 qt rectangular baking dish (9x13)

Using a spoon, drop mashed potatoes in large mounds over chicken mixture. (Can also spread, shepherd's pie like)

Bake, uncovered, in 375 degree oven for 30-40 minutes or until heated through. Let stand for 5 minutes before serving.
