Chicken Zoodle Alfredo

Ingredients
4.0 oz Cream Cheese4.0 oz Mozzarella Cheese, part skim milk0.5 cup Parmesan Cheese, grated0.5 cup Milk, 2%, with added nonfat milk solids, without added vit A1.0 tsp Pepper, black1.0 dash Salt0.5 cup Margarine, soft4.0 thigh, bone and skin removed Chicken Thigh6.0 cup, sliced Zucchini8.0 oz Almond Breeze Almond Milk, Unsweetened Original, shelf stable1.5 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend0.5 cup Flour - Gold medal all purpose flour
Directions
Use veggetti to spiralize 4 small zucchinis. (Place in between paper towels) Preheat oven to 350° Cube boneless skinless chicken thighs and cook up in a pan sprayed with cooking oil. (Set aside) Add margarine and melt. Add flour and "cook" for 2 mins. Add Mrs. Dash garlic and herb, cream cheese, and both milks. Salt and pepper to taste. Add Parmesan cheese and stir until thick. Add cooked chicken to sauce. Place zoodles in a baking dish and add sauce/chicken then top with a little mozzarella and back for 25 mins. Serve hot and enjoy. *can substitute any healthier versions of ingredients you see fit. (Skim milk, fat free this or that, etc.) Serving Size: Makes 8 3\4 cup servings.
