Quick Pork and Beans

Ingredients
150 grams Pork Tenderloin 2 small Onions, 3 cloves Garlic, 1 small Carrot, 100 grams Courgette, 1 tbsp Extra Virgin Olive Oil 125 grams canned red kidney beans255 grams canned white Beans2 Chipotle Peppers in 1 Tbsp Adobo Sauce400 gram can Chopped tomatoes in tomato juice1 cup of water70 grams Tomato Paste Black pepper, to taste
Directions
Chop vegetables and saute in olive oil for 5-10 minutes. Add pork, cook until sealed. Remove pork from pan, slice into small pieces, return to pan. Add chipotle peppers, tinned tomato (do not drain) tomato paste, black pepper and water. Bring to a simmer and let cook on a slow heat until pork is tender (approx. 1 hour.) Add beans, stir gently and bring back up to temperatureuntil warmed thoroughly.
