Penne Pasta with Fresh Tomatoes and Basil

Ingredients
5 ripe tomatoes chopped1 bunch (about 1/2 c.) finely chopped2 cloves minced fresh garlicsmall can of sliced black olives1.5 Tbsp. Balsamic Vinegar1 Tbsp. Olive OilSalt and Pepper to taste1/2 c. LF Feta Cheese6 oz. Mini Penne Pasta
Directions
mix first 7 ingredients together. Let sit at room temperature for 15-30 mins.

Cook Pasta according to box. Drain.

Mix pasta and tomato mixture together. Add Feta.

Mix and serve.

    I'm thinking it is a bunch of basil, that's what I used. I really enjoy this recipe when the tomatoes are fresh from the farmers market. I skip the olives, too salty and interferes with that fresh basil flavor - 6/9/08
