Healthy Sweet Potato pancakes

Ingredients
1.0 egg Duck Egg0.3 cup Applesauce, unsweetened1.5 cup Sweet potato, cooked, baked in skin, without salt1.0 tsp Baking Powder0.5 tsp Baking Soda1.25 cup Whole Wheat Flour1.25 cup Milk, Soy, Organic, Unsweetened, SILK (1cp/8oz)1.0 tbsp Bragg Apple Cider Vinegar0.5 tsp Salt
Directions
Peel and mash sweet potato Mix vinegar and milk Beat egg well Add milk, sweet potato, applesauce and soda, mix well Add flour and baking powder, mix until flour is just moistened Use .25 cup measuring cup scoop and drop onto hot griddle or frying pan. Cook until browned on first side (approx 1 minute), flip and cook approx 30 seconds on other side. Serving Size: Makes 12 pancakes
