0.75 cup Boiling water (by SANDYJ59) .5 cup, pitted, chopped Dates 4 tbsp Earth Balance Natural Buttery Spread 1 tsp Lemon Peel 1 tsp Vanilla Extract 0.75 cup Arrowhead Mills quinoa rice & shine cereal 0.75 cup Flour - Whole Wheat Pastry Flour (Bobs Red Mill) (by AKHOCKEYCHIC) 0.33 cup Sucanat (by DOKEYOKEY) 2.5 tsp Baking Powder .5 cup, chopped Walnuts
in a medium bowl blend water, cates, margarine, lemon peel and vanilla. let stand 4 minutes until the margarine melts.
in a small bowl combine cereal, flour, sugar and baking powder. Stir into date mixture until just blended.
Mix in walnuts
Spoon into greased muffin tin. Bake at 375 degrees for 25 minutes or until done.
serve warm makes 12 muffins.
