Super's Minestrone

Leeks, 2 cupCelery, raw, 1 cup, diced*Del Monte Petite Cut Diced Tomatoes, 2 cupOlive Oil, 3 tbspCarrots, raw, 1 cup, gratedBroccolini, 2 cupSpinach, fresh, 6 cupRed Wine, 8 fl ozBasil, dried, 1.5 tbspOregano, dried, 1.5 tbspThyme, dried, .75 tbspBeans, Cannellini, 2 cupBeans, White, 2 cupPepper, black, 1 tspVegetable Broth, 7 cupTomato Paste, .5 can (6 oz)Garlic, 5 clovesFusilli pasta, 3/4 cup
This is a very "chunky" but healthy minestrone that's easy to make. If you like you your minestrone a little soupier then I'd suggest using only 1 can of beans and reducing the broccolini and spinach a bit.
Saute leeks and celery in olive oil until soft about 6 mins.
Add chopped garlic, saute for 1 minute
Add wine and allow to cook out alcohol for about 2 mins.
Add broth, shredded carrots, tomatoes, and herbs and simmer for 15 mins.
Add chopped broccolini simmer for another 5 minutes
Add Fusilli pasta and beans, simmer 8 minutes
Add chopped spinach, simmer for 5 minutes
Pepper to taste
