Don's red beans with onion and cayenne pepper

454 gram(s) Vegetable - Bean - Pink Beans - Dried Winn Dixie - grams (by SUNSHINETEAM) 1 oz Bacon - Raw - 1 oz - nutriondata.self.com (by SATINSWAN) 4 oz Onion, sweet, raw 40 fl oz Water, tap 1 tsp Pepper, red or cayenne 0.5 tsp Diamond Crystal - Kosher Salt (by SHIRTTALES)
Chop slice of bacon and cook slowly over medium heat to render fat, then add chopped onions 1/2 cup should do it. Cook the onions over medium heat stirring to prevent burning (sometimes I also add celery chopped 1/2 c or a can of Rotel tomatoes) until clear or golden if this is what you want (caramelized) add beans and water. Stir to get mixed well and onion off the bottom. Over high heat bring to a boil turn adjust heat just low enough to keep boiling with a cover on. Cook slowly for 6 hrs or so. towards the end add salt and cayenne pepper and serve.
