Sweet Potato Hash Casserole

20 oz Alexia Sweet Potato Puffs 2 cups Egg substitute, liquid (Egg Beaters) 8 serving Morning Star Soy Sausage, 1 Pattie (38g) Vegetarian 1 bag frozen Pepper & Onions1 cup Spinach, frozen 0.25 cup Milk, nonfat 0.50 cup Kraft 2% Shredded Cheddar Cheese
Put 2 racks in the oven, one in the top third, one in the bottom. Preheat oven to 400.
Lay morningstar on a tin foil lined baking sheet. Lay potato puffs on a 13x9 casserole dish. When the oven is heated, put puffs on the top rack and bacon on the bottom.
Cook peppers & onions and spinach in the microwave or on the stove top, drain.
Beat eggs and seasonings.
When morningstar is done (about 10 minutes), remove from oven and break into small pieces.
When morning, veggies and eggs are ready, remove puffs from oven.
Lower oven to 350
Top puffs with crumbled bacon, peppers & onions, spinach, eggs and cheese.
Bake for 1 hour or until center is hot.
