Good for you carrot muffins

Ingredients
2 serving Kellogg's Special K Cereal, original (1 cup) 5 serving Egg white, large 2 cup, grated Carrots, raw 4 serving Great Value No Calorie Stevia 2 tbsp Coconut Secret Raw Coconut Flour (by GFERBER) 2 tsp Apple Pie Spice (by REBECCAF62) 1 fl oz Lemon Juice
Directions
Grade the carrots and drain well. Pour half the juice over carrots and half in the egg whites. Meringue the egg whites. Mix spice and coconut flour. Add it to the carrot mixture. Mix. Add crushed cereal. Add the egg whites and mix carefully. Bake in 4 silicone molds for 30 min at 150.
