Elaine's Chicken Soup

Ingredients
1.0 cup, chopped Onions, raw1.0 cup, diced Celery, raw1.5 cup, chopped Carrots, raw4.0 tsp Knorr Chicken Bouillon0.5 tsp Pepper, black32.0 oz Chicken, Costco Rotisserie Chicken (3oz/85gm)16.0 cup (8 fl oz) Water, tap
Directions
Put water and whole chicken into stew pot. Cook about 2 hrs. While chicken is stewing, clean and chop veggies. Set aside. Remove chicken and set aside to cool. Run broth through a strainer to remove bones & skin that came off the chicken. Place chopped veggies into the strained broth. Add Knorr bouillon and pepper. Gently simmer while you debone chicken, remove remaining skin, and shred the meat. Add meat back to the pot. Add more water to cover all the ingredients and replace what evaporated. Cook until vegetables are soft.
