2.0 large Egg, fresh, whole, raw2.0 tbsp chopped Onions, raw2.0 tbsp Green Peppers (bell peppers)2.0 tbsp Peppers, sweet, red, fresh0.75 cup Egg White--All Whites 100% liquid egg whites500.0 gram(s) potatoes-Simply Potatoes Hash browns2.0 oz hillshire farms honey ham low sodium0.5 cup lucerne low fat cheese0.25 gram Pam cooking spray
Pre heat oven to 350. Spray muffin pan. Spread potatoes around bottom and press potato inside of each muffin cup place in oven and bake for 10 minutes.
Meanwhile beat eggs and egg whites together in a medium bowl. And ham, peppers, onion, and cheese to bowl and mix to combine
Remove potatoes from oven and press potatoes down firmly with a spoon so that they are spread out like mini pie crust. Add about 1/4 cup of egg mixture into the center of each muffin cup.
Return pan to oven and bake until potatoes are crisp and golden, and the egg mixture is set, about 15 minutes. Remove from oven and let sit about 5 minutes before serving. Yields one cup per serving
