Curried Lentils & Kidney Bean Stew

1 cup Lentils1 1/3 cup Kidney Beans (about half a pound dried)3 medium onions, diced6 tbsp curry powder (or more to taste)5 tbsp garlic powder3 tbsp ground ginger4 cups water (2 if you use canned beans)1 package frozen carrots & peas1 package broccoli1 can light coconut milk
If you are using dry beans, soak overnight as directed.
Place lentils, beans, spices, & water in the crockpot. Cook on low for about 4 hours. Add frozen veggies, cook another 2 hours or until lentils are soft and veggies are warm throughout.
Mix in can of coconut milk before serving.
Serve over brown rice.
Makes about 8- 1 cup servings.
