Rich with Peppers onion corn

2 cup parboiled rice4 cup vegetable stock2 cup sweet corn1 1/3 cup corn1 cup chopped green or red peppers1 cup chopped onion 1/2 tsp each: oregano crushed red pepper flakes coriander garlic powder
- Combine rice and vegetable stock in a medium stock pot. Add spices.
- Cover and bring to a boil. Reduce heat. Simmer 22 minutes or until the stock is fully absorbed.
- Combine onion, corn and peppers. Heat to serving temperature in the microwave, or about 3 minutes.
- Add the vegetables to the rice and stir to combine.
Serving Size: makes eight 1 cup servings
