Ingredients
2 avocados, cut into 1/2/ inch cubes1 can black eyed peas (drained)1 can diced tomato with onion (drained)1/2 cup of fat free or light Italian dressing1 T lime juice1/1 tsp. saltThat's it. Just mix it all up and serve with something to scoop it up.** Canned black eyed peas are hard to spot in the grocery store. Mine has them by the regular canned vegetables instead of by the beans. If I was in a pinch, I'd substitute black or navy beans.
