Cauliflower Bread Sticks

4 cup Cauliflower, raw 4 large Egg, fresh, whole, raw 3 tsp Oregano, ground 4 clove Garlic 3 cup, shredded Mozzarella Cheese, whole milk
1. Preheat oven to 425 F degrees. Prepare 2 pizza dishes or a large baking sheet lined with parchment paper.
2. Cut cauliflower into florets and put in food processor and pulse until cauliflower resembles rice.
3. Place the cauliflower in a microwave for 10 minutes. Place in a large bowl and add eggs and 2 cups of mozzarella, oregano, garlic, salt and pepper to taste. Mix together.
4. Separate the mixture in half and place each half onto the prepared baking sheet and shape into either a pizza crust or rectangular shape for the breadsticks.
5. Bake for about 25 min. or until golden. Remove from oven, sprinkle with remaining cheese and put back into oven for another 5 minutes or until the cheese is melted.
6. Slice and serve.
