Ned's potato salad

Ingredients
*Potato, raw, 5 medium (2-1/4" to 3-1/4" dia.) Celery, raw, 1 cup, dicedOnions, raw, .5 cup, chopped*Best Foods, Reduced Fat Mayonnaise, 1 cupSalt, 2 tsp Cider Vinegar, .66 tbsp Hard Boiled Egg, 4 large Granulated Sugar, 1 tsp
Directions
Coarsley chop potatoes. Boil along with eggs for 9-10 minutes.

Drain, rinse with cold water and allow to cool.
Add chopped celery, onion, and 2 eggs. (Save remaining eggs for garnish on top.)
Mix remaining ingredients until smooth. Mix into the potato celery mixture tossing lightly to avoid smashing the potatoes.
Slice remaining 2 eggs on the top and sprinkle a little paprika for garnish if desired.

Makes about 12 one-half cup servings.
