Spinach ricotta pizza

20.0 Grams Cheddar or Colby Cheese, Low Fat1.0 cup Spinach, cooked1.0 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average1.0 pita, large (6-1/2" dia) Bread, pita, whole-wheat1.0 serving 1 Med. Green Bell Pepper40.0 Grams Ricotta Cheese, whole milk
Mix the spinach and the ricotta cheese
Brush on a little olive oil on the pita
Spread the mix over the pita bread almost to the edge
Sprinkle the cheese
Tomato and pepper
Place on baking sheet, bake for 4-6 minutes
Slice with pizza cutter and enjoy!
