Indian tomato lentil soup with brown rice

Ingredients
1 Tbsp olive oil1 onion, chopped4 garlic cloves, chopped1/2 tsp ground ginger1/2 tsp garam masala1 tsp ground cumin19 oz diced tomatoes and juice1 cup dry red lentils1/3 cup brown rice, uncooked4 cups water1/2 tsp salt
Directions
Add brown rice to 1 cup boiling water, reduce to simmer and cook for 45 minutes. Drain any remaining water.

Saute onions in oil until tender. Add garlic and spices, cook for two minutes. Add tomatoes, lentils, water, and salt. Bring to a boil then reduce to a simmer for 35-40 minutes. Add brown rice. Using immersion blender, blend lightly until somewhat creamy but still chunky.
Serve with a drizzle of lemon juice and chopped cilantro.
