Omelette with Onion, Mushroom and Goat Cheese

1 large Egg, fresh, whole, raw 1 serving Egg white, large .125 cup, chopped Onions, raw .125 cup, pieces or slices Mushrooms, fresh 1 oz Goat Cheese, Soft 1 fl oz Water, tap 1 dash Salt 1 dash Pepper, black
1. Whisk together egg and egg white until lightly frothy.
2. Add about a tablespoon of cold water and continue whisking. This adds air and makes the omelette fluffier (also works for scrambled eggs). Add salt and pepper to mixture.
3. Dice onion and mushrooms. Cook in pan over medium-high heat in a nonstick pan. Add a spritz of olive oil if necessary.
4. Remove onion and mushrooms from pan and set aside. Meanwhile, add egg mix to pan. Let set for one minute and then add onion and mushroom mix. Cook for an additional minute or two until egg is set.
5. Transfer omelette to a plate and spread goat cheese on one half, folding dry half over.
