Curried Basmati Rice - 08/06/08

Ingredients
2 tbsp. olive oil1 large onion2 cups raw cauliflower1 cup raw broccoli1/2 cup matchstick carrots1 tbsp. chopped garlic1 tbsp. dry ginger1 tbsp. curry powder2 tbsp. dry chicken soup mix1 cup dry basmati rice1/2 cup raisins1/4 cup slivered almonds2 cups water
Directions
Saute vegetables with olive oil in a medium sauce pan with lid. Add spices, nuts and raisins. Mix chicken soup mix in water and add to pan. Add rice. Bring pan to boil, stirring constantly, then turn off heat and cover. Let stand for 15 minutes. Makes 19 100g servings.
