2 tbsp ground chia⅓ cup warm black tea2 ½ tbsp canola oil¼ tsp liquid stevia extract½ tbsp vanilla extract½ tsp coconut extract1 cup spelt flour¼ cup sugar½ tsp baking powderpinch salt½ tsp cardamom½ tsp cinnamon¼ tsp ginger¼ tsp cloves¼ tsp nutmegpinch white pepperpinch black pepperpinch turmeric2 tbsp toasted sesame seeds, plus some to sprinkleOptional:powdered sugar + chai tea for glaze
Preheat oven to 350ºF and line a baking sheet with a silicone liner or parchment paper.
Whisk together ground flaxseed, tea, oil and extracts.
Mix in the flour, sugar, baking powder, salt, and spices until well mixed.
Add sesame seeds and stir to just combine.
Shape the dough into a log on the baking sheet and sprinkle with sesame seeds.
Bake 25 minutes, until the loaf is firm and golden brown.
Reduce oven to 300ºF (convection if you have it).
Using a serrated knife, slice loaf into biscotti sticks.
Place sticks, cut side up, on the baking sheet and return to the oven for 15 minutes more.
Place on a wire rack to cool completely. Store in an airtight container.
