Roasted Cauliflower with Turmeric

Ingredients
1 head cauliflower cut into bite size pieces3 Tbsp. Olive Oil1 tsp. ground turmeric2 tsp. ground ginger or 1 Tbsp. freshly gratedsalt and pepper to taste
Directions
Makes approx. 6 1-cup servings
Mix all ingredients except cauliflower in an oven safe casserole dish. Add cauliflower and stir to cover cauliflower pieces. Bake at 425 degrees for 25 min. or until golden brown.
