Ingredients
2.43 oz Cheddar Cheese5.6 large Egg, fresh, whole, raw0.93 oz Goat Cheese, Soft6.53 dash Salt0.93 1tsp Olive Oil210.93 Grams Pork Sausage6.53 serving Tortillas, MISSION, flour tortilla, 8 inch, 49g75.6 gram(s) Spinach, Chopped, Best Choice (1 cup)
Directions
Preheat oven to 425 Spray 2 baking sheets or line with tin foil Cook sausage in pan until barely cooked through add chopped spinach (peppers are optional) to pan and sauté Add eggs (whisked in a bowl) and mix frequently Take off heat once barely cooked through Mix in 2 tbs of goat cheese( or feta cheese) Microwave large flour tortillas for 30 seconds Divide filling evenly throughout 7 tortillas Sprinkle cheddar on top (optional) Roll tortilla and place on tray seam side down Lightly spray with cooking oil Sprinkle kosher salt on top Bake for 10-13 minutes or until crispy Serving Size: 1 taquito
