Yummy Mashed Cauliflower

Ingredients
2 heads of Cauliflower6T Sour Cream 1 Ranch Dip Mix Hidden Valley Ranch 2C Heavy Whipping Cream6T I Can't Believe It's Not Butter Spread2C Shredded Sharp Cheddar
Directions
My food processor only holds 1 head of cauliflower so I have to repeat the steps twice. Obviously, if you are only using 1 head, you can cut everything in half!
1. Chop and Wash Cauliflower heads into 1-1.5 inch pieces
2. Place in microwave safe dish and add 4T of heavy cream, 2T butter
3. Loosely cover and Microwave for 6 min, stir, microwave another 6 minutes. Florets should by tender. Because I have to make 2 separate batches, you may need to add 2 or more minutes to ensure your florets are fully cooked.
4. Place all ingredients in the food processor and mix. Depending on the size of the your cauliflower, add heavy cream little by little until desired consistency is reach.

Serving Size: 13 1/2 cup servings
