Baba Ghanoush Eggplant Dip

Ingredients
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh Cut in half after washing it. Pierce the black skin. Turn over & make 1" deep cuts into inner flesh with knife. Cover with4 tbsp Extra Virgin Olive Oil Place face down onto baking sheet. Bake for 20-25 minutes at 375 in oven. Take out & allie to cool. Scoop out flesh into colander & let any extra liquid drain off.Put this into mixing bowl with garlic & salt. 2 cloves Garlic minced. 0.25 tsp Salt 32 grams Tahini plus1/2 tbsp Lime Juice, juice of 1/2 lime or amount to consistency you wantUse back of large spoon to cream ingredients smooth. Or use a food processor.
Directions
375 degrees for 25 minutes Most recipes call for food processing, but it eats just fine if you put the elbow grease into the mixture. Serving Size: Makes 2 servings @ 1/3 cup each
