rhubarb waffles with rhubarb sauce

5 cups rhubarb diced.5 tsp cinnamon1.5 cups splenda2 large eggs1.25 cups skim milk.5 cups wheat flour1.5 cups white flour3 tbls splenda1 tbls baking powder.25 tsp salt
preheat waffle iron to medium high heat
combine fisrt 3 ingredients in 2 qt. sauce pan
simmer til rhubarb is tender.
remove 1 cup of the sauce to cool
cook the rest of the rhubarb till it thickes slightly
in large bowl wisk eggs, add milk and cooled rhubarb
stir in flours,splenda,baking powder, and salt, just till moistened
spray waffle iron with nonstick spray
fill with batter cook till nicely browned
makes about 9 4" X 5" waffles
