4-6 red potatoes (depending on size and how many you need to feed) - this works well for 2 people with leftovers for another meal2 Tbls Onion Powder2 Tbls Garlic Powder1 Tbls Paprika3-4 Tbls Extra Virgin Olive Oil
1. Cut potatoes in quarters (or more if they're bigger than your palm [depends on how big you want the pieces]) and place in 3-qt microwave-safe dish.
2. Sprinkle all other ingredients over potatoes.
3. Stir well to coat potatoes.
4. Put in microwave on high for 5 minutes.
5. Stir well.
6. Microwave another 5 minutes on high.

These are yummy! I also make something similar in the oven with Russet potatoes and onions/minced garlic, but I needed something fast and this was perfect! I would never have thought of cooking them in the microwave. I didn't peel the potatoes & used minced garlic & added some dried onion flakes. - 11/8/09
