Baked oven spinach frittata

Ingredients
1 Tbsp canola or olive oil1 medium onion (approx. 1/2 c.)9 oz. spinach4 eggs6 egg whites8 oz. shredded low fat cheddar cheese1/2 tsp. black pepper1/4 tsp. salt1/4 tsp. nutmeg
Directions
Saute onions until soft in hot oil. Add spinache and cook until wilted and all liquid is evaporated out.

Mix eggs, egg whites, cheese, pepper, salt and nutmeg together. Add to spinache mixture and stir. Place in preheated oven at 350 degrees for 15 min.

Let set 10 min.
