Sri Lankan Carrot Salad

Ingredients
1 cup Carrots, raw, strips or grated (by JESSECO) 0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) .25 cup, chopped or sliced Red Ripe Tomatoes 2 lime yields Lime Juice 1 pepper Jalapeno Peppers
Directions
grate carrots, mince jalapeno, onion, and tomato very finely. mix together, add lime juice, salt to taste and refrigerate. Best if made a day early and allowed to sit in fridge overnight. Serve COLD.
