1.0 large Egg, fresh, whole, raw4.0 serving Egg whites, Egg Beater Liquid Egg Whites2.0 cup, pieces or slices Mushrooms, fresh2.0 medium whole (2-3/5" dia) Red Ripe Tomatoes0.2 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)1.0 tbsp Extra Virgin Olive Oil
Heat oil in pan. Add mushrooms and onions, cook for about 5 minutes. Add tomatoes and cook for 1 more minute. Beat 1 egg and 4 egg whites, then add to pan and cook until eggs are done.
