Lorraine's Vegie Fritata

Ingredients
0.25 cup Half and Half Cream8.0 large Egg, fresh, whole, raw1.0 tbsp Butter, unsalted1.0 dash Pepper, black1.0 dash Salt74.0 gram(s) bell pepper, red, sweet, raw100.0 gram(s) Brocoli4.0 oz shreded cheese
Directions
Scramble eggs, cream, salt and pepper. Melt butter in oven proof skillet. Pour egg mixture in pan and cook on medium heat. As bottom starts to set add vegies and cheese. Press into egg mixture. Once halway cooked, place under broiler to finish cooking the top. Egg will puff up on top when done. Remove and let cool 5 minutes. Cut like a pie and serve with fresh fruit. Serving Size: Makes 4 large pie shaped servings
